酸甜肉柳
①大葱切末,里脊肉切成长约5cm的条状,用5毫升黄酒和3克盐抓匀腌制10分钟;
②生抽、白糖、黄酒、醋和水淀粉调成糖醋汁备用;
③鸡蛋清加干淀粉、面粉和少许水调匀成厚面糊,将里脊条放入其中挂糊备用;
④炒锅中倒入500毫升油,中火烧至7成热,转小火,将挂好糊的里脊条逐条放入锅中,炸至微黄色捞出沥油;
⑤待油温再升高一些,将里脊肉倒入锅中以小火复炸至金黄色后捞出沥油;
⑥炒锅以中火预热下油5毫升,下葱末爆香,转小火,下番茄酱稍炒,倒入糖醋汁,煮至浓稠红亮,最后再倒入炸好的猪里脊肉翻匀。一道色香味俱全的酸甜肉柳就完成啦!
