4-虾滑,慎点
虾滑不是重庆火锅原有的菜,算是舶来品,🐭🐭是真的很喜欢,但是也是真的踩了好多坑

虾滑很多店都是虾仁剁碎拌淀粉,虾仁含量就有的多有的少了,虾仁多不多直接影响味道和口感,而且虾仁要新鲜的才好吃,有的点的虾滑虾仁都快成虾干了

不管虾仁含量多少,但是都被纯手打的虾滑薄纱,而且🐭🐭也不喜欢在虾仁里面加鱼子(这个都还好)还有贡菜香菜什么的,就喜欢纯手打出来的纯虾仁虾滑,Q弹且虾味足,超好吃

虾滑浮起来就能吃了。
虾滑感觉反而是一些年轻化的连锁店比如说海底捞一斗晓秧锅这些做得好,重庆本土火锅店反而不咋地,都是在淀粉拌虾仁---虾仁拌淀粉之间随机波动

,可能是因为是舶来品而且制作麻烦,保存要求偏高,老一辈重庆人又不会吃,基本上是年轻人点所以点餐率不高,因此不怎么备菜吧,就取巧了
