Yes! You totally can change a culture's aesthetic (and bunches of other stuff) via savegame editing. First, you need an editable save file, so launch the game in debug mode (or use a mod to switch to debug mode) and use the autosave-on-exit thing to, save an autosave_exit file. You can open that file in the text editor of your choice. Once you have it open, find the culture in the save file. If it's a unique diverged culture, search the charID of a character of that culture and find the culture's serial number (culture = YYYY), then search the serial number. If it's a culture that's coded into the game, search the culture tag (ie. "mountain_orc"). In either case, you'll find first a bunch of information about innovations and such -- scroll down past those until you reach "collective_noun=".
